恩巧克力蛋糕En's chocolate cake




如果你需要一些巧克力口味但不那麼濃郁的小點心,那一定要試試這款蛋糕!
這個蛋糕的質地介於濕潤布朗尼與鬆軟海綿蛋糕間,有點神奇~
If you were searching for something chocolatey but not too rich, here it is!
The texture of the cake is between brownie and sponge.

份量: 7寸圓模或15x15cm方模
             7 inches cake tin or 15x15cm square mode

巧克力蛋糕 Chocolate cake
 A. 苦甜巧克力     165g
 B. 奶油或植物油        80g
 C. 蛋黃       大的4顆或中的5顆(室溫)
 D. 蛋白       大的4顆或中的5顆
 E. 細砂糖   40~60g
 F. 低筋麵粉        100g

dark chocolate    165g
butter or vegetable oil     80g
egg yolks     4 large or 5 medium size(room temperature)
egg whites    4 large or 5 medium size
caster sugar    40~60g
cake or all-purpose flour    100g


裝飾 Decoration
 G. 打發的鮮奶油或香草冰淇淋
 H. 蜂蜜

 whipped cream or vanilla ice cream
 honey



作法Steps:
1.隔水加熱或微波融化A、B,要不時攪拌
Melt the chocolate and butter/oil using microwave or double boiler. Stir from time to time.

2.C一次一個拌入巧克力糊備用(蛋黃不可以太冰不然巧克力會凝固,如果凝固就微波30秒)
Stir in the egg yolks one by one. Make sure your egg yolks aren't cold otherwise the chocolate  mixture would become sticky and very hard to stir, if that happen, just microwave it for 30 seconds. Set that bowl to one side.

3.將D放入另一個大碗中,用電動打蛋器以高速打到軟性發泡(舉起打蛋器時蛋白呈現彎勾),將E一次一大匙加入蛋白中(打蛋器持續運轉)全加入後再打30秒
Put the egg whites into another bowl and beat with high speed until it forms soft peaks. Add in the caster sugar one table spoon at a time with the mixer beating on high speed. When all the sugar has incorporated in the egg whites, beat for another 30 seconds.

4.用刮刀分三次將蛋白拌入巧克力糊(用切拌而非攪拌)
Using a spatula fold your egg whites into the chocolate mixture in three batches.

5. 將F篩入4.後也是以切拌法拌勻,不要過度攪拌
Shift the flour over the mixture and gently fold it in. Do not over mix.

6. 將蛋糕模抹油或鋪一層烤盤紙,將麵糊倒入抹平
Line or grease the cake tin. Pour the cake batter into the tin. Spread evenly.

7. 放入烤箱以170℃烤35分鐘直到中心凝固,不用烤到裡面熟透不然會太乾
Bake in the oven for 35 minutes at 170℃/340℉ or until the center is solid. You don't need to bake until the center comes out clean, that way the cake would become too dry.

8. 烤好後稍微放涼,切成喜歡的大小。要吃時挖一大球鮮奶油或冰淇淋放在上面並淋上蜂蜜
Let the cake cool slightly then cut into any shape you like. Serve with a generous scoop of whipped cream or vanilla ice cream and drizzle some honey on the top. Enjoy~
